Coocoo for Kuku Sabzi

9:00 AM

I have been smitten by this very simple dish. It is apparently popular for Persian New Year. But may be it should be recommended for date food as well because of barberries? It is a funny story.

While searching online for what they were (looking for substitutes), I chanced upon a site that said:

"Iranian cooks will know barberries well as a key ingredient in certain wedding dishes, where their sourness stands as a symbol of the fact that life isn't always a bed of roses."

Ingriedients:
5 eggs
1 cup fresh parsley, packed

1 cup dill, packed
1 cup chives
1 cup cilantro, packed
1/3 cup walnuts
1-2 tbs barberries
1 tsp baking powder

Chop all the herbs. Toast the walnuts a bit. Beat the eggs with the baking powder. Combine with the herbs and cook like you would a frittata.
